From vibrant Caribbean fruits and West African spices to Southern cookouts and Latin American street markets, July is all about gathering around the table and enjoying the foods that bring us together.

🍉 July’s Featured Ingredient: Watermelon


Watermelon is one of summer’s most beloved fruits across the Diaspora. Whether enjoyed fresh on a hot afternoon, blended into refreshing drinks, added to salads, or served at family reunions and neighborhood cookouts, watermelon has become a staple of summer celebrations around the world.


Rich in vitamins A and C, antioxidants like lycopene, and over 90% water, it’s as nourishing as it is delicious.

Caribbean Watermelon, Cucumber & Mint Salad


A light, colorful dish inspired by Caribbean flavors that’s perfect for barbecues, picnics, brunches, and warm summer evenings.


Ingredients

  • 4 cups fresh watermelon, cubed

  • 1 cucumber, chopped

  • ¼ red onion, thinly sliced

  • Fresh mint leaves

  • Juice of 2 fresh limes

  • 2 tablespoons extra virgin olive oil

  • Sea salt and cracked black pepper

  • Optional: Crumbled feta or your favorite vegan cheese

  • Optional: A drizzle of balsamic glaze


Directions

Combine the watermelon, cucumber, red onion, and mint in a large bowl. Whisk together the lime juice, olive oil, sea salt, and black pepper. Pour over the salad and gently toss. Refrigerate for 20 minutes before serving. Top with feta or vegan cheese and finish with a drizzle of balsamic glaze for an extra layer of flavor.

Jamaica

Grilled Jerk Corn with Fresh Lime & Herbs

A smoky, spicy twist on sweet summer corn that’s perfect for backyard barbecues.


Ingredients

  • 4 ears fresh corn, husked

  • 2 tablespoons melted butter (or vegan butter)

  • 1 tablespoon jerk seasoning

  • Juice of 1 lime

  • 2 tablespoons chopped cilantro or parsley

  • Pinch of sea salt


Directions

Grill the corn over medium-high heat for 10–12 minutes, turning occasionally until lightly charred. Brush with melted butter mixed with jerk seasoning. Finish with fresh lime juice, herbs, and a sprinkle of sea salt.




Ghana

Roasted Plantains with Spicy Pepper Sauce

Sweet roasted plantains paired with a bold pepper sauce create a delicious balance of flavors.


Ingredients

  • 2 ripe plantains

  • 1 tablespoon vegetable oil

  • Pepper Sauce

    • 1 tomato, chopped

    • 1 small onion

    • 1 Scotch bonnet pepper (or jalapeño for less heat)

    • 1 garlic clove

    • Salt to taste

    • 1 tablespoon olive oil


Directions

Slice the plantains lengthwise and brush lightly with oil. Roast at 400°F for 20–25 minutes, turning once.


Blend the tomato, onion, garlic, pepper, olive oil, and salt until smooth. Serve the roasted plantains alongside the fresh pepper sauce.





Nigeria

Suya-Spiced Vegetable Skewers

Inspired by Nigeria’s famous suya seasoning, these colorful skewers are smoky, spicy, and full of flavor.


Ingredients

  • Bell peppers

  • Red onion

  • Zucchini

  • Mushrooms

  • Cherry tomatoes

  • Seasoning

    • 2 tablespoons peanut powder

    • 1 teaspoon paprika

    • 1 teaspoon garlic powder

    • 1 teaspoon onion powder

    • ½ teaspoon cayenne pepper

    • ½ teaspoon ginger

    • Salt

    • 2 tablespoons olive oil


Directions

Whisk together the olive oil and seasonings. Toss vegetables until coated and thread onto skewers. Grill for 10–12 minutes, turning occasionally until tender and lightly charred.





Brazil

Black Bean & Mango Salad

A refreshing combination of sweet fruit, hearty beans, and bright citrus.


Ingredients

  • 2 cups cooked black beans

  • 1 ripe mango, diced

  • 1 red bell pepper, diced

  • ½ red onion, diced

  • 1 avocado, diced

  • ¼ cup chopped cilantro

  • Dressing

    • Juice of 2 limes

    • 2 tablespoons olive oil

    • Salt and black pepper


Directions

Combine all salad ingredients in a large bowl. Whisk together the dressing and toss gently. Chill for 20 minutes before serving.





Trinidad & Tobago

Pineapple Ginger Cooler

A tropical drink that’s naturally refreshing and perfect for hot summer days.


Ingredients

  • 3 cups fresh pineapple chunks

  • 1-inch piece fresh ginger

  • Juice of 2 limes

  • 3 cups cold water or coconut water

  • Fresh mint

  • Ice


Directions

Blend the pineapple, ginger, lime juice, and water until smooth. Strain if desired. Pour over ice and garnish with fresh mint.





American South

Grilled Peaches with Local Honey & Fresh Herbs

Simple, elegant, and bursting with summer flavor.


Ingredients

  • 4 ripe peaches, halved

  • 2 tablespoons local honey

  • 1 tablespoon olive oil

  • Fresh thyme or basil

  • Optional: Greek yogurt, vanilla ice cream, or whipped ricotta


Directions

Brush peach halves lightly with olive oil and grill cut-side down for 3–4 minutes until caramelized. Drizzle with honey and top with fresh herbs. Serve warm on their own or with yogurt, ricotta, or vanilla ice cream.
